Can I find quality of meat you sell at the local Supermarket?

Unlikely. Supermarkets deal in massive volumes and competition keeps their margins small, their infrastructure is meant to sell as much as they can as quick as they can. When it comes to beef, the difference is even more steep as we have significantly better aging standards than your local supermarket.

The better the aging process, the better the meat usually is. High-end steakhouses and butchers such as us invest significant time and money into properly and consistently aging beef. However, even your average supermarket beef has been aged for at-least a week.

All of our beef is aged for at-least 30 days, some of our cuts are dry aged 21+ days and up to 60 days.
Our steaks are hand-selected and hand-cut by our expert butchers. Every portion is perfect… or as perfect as possible.

You may find similar high quality offerings at high end purveyors. We have modeled our business after the best of the best… Meat N’ Bone was born precisely because its hard to access Steakhouse Grade Beef at affordable prices… our operations is extremely lean to keep costs low.

All of our Flash Frozen food is fresh, meaning it was frozen in the last 10-15 days. Unlike some more recent competitors who buy their meats at the best price possible, freeze it and sell it you you frozen even if it is 1 year old meat.

Last but not least… supermarkets are deceiving.

Grass Fed, Grass Raised, Choice, Prime, Premium… all these claims are NOT regulated by the USDA. So often you think you are buying a USDA Prime steak and turns out you are just buying what “they” chose to call Prime.

Here is something we learned. Anyone and everyone can call their beef Prime, Choice or Grass Fed. But legally, a piece of beef only has to meet the definition of USDA Beef grades if you put the word USDA before… as in USDA Prime and USDA Choice. For example, “Georges Prime Beef” doesnt mean it is actually Prime.

What does it mean Sold Out?

We receive inventory every week on Monday, Wednesday and Friday. If an item is not available immediately, we will be have it within a couple days. So if you don’t mind waiting a couple days, go ahead and place your order with confidence.

If you require same day delivery, please select items that are currently in stock. Any items not in stock will be delivered as they become available.”

Anything “sold out” means we are not quite sure when the item will be back in stock, so we cannot guarantee fulfillment. As a result it is not for sale.

We do our best to never deviate more than 5% from the seize advertised, that is why every product has a weight-range. We can’t control the living animal, these are beautiful living and breathing animals that experience happiness, sadness, peace and stress. They are social with other cattle, just like us. But they have been raised for the sole purpose of providing food to human beings. The beauty of the industry is that no 2 pieces are identical, each animal has their own story corresponding to the family and farm that cared for them. We try to make the imperfect perfect, that is our job. However, we do not use cookie cutter stamps for our steaks… if that is what you are looking for, you are better off buying from companies like Sysco.

Grain-Finished vs Grass-Fed?

All cattle are grass-fed and spend the majority of their lives on pasture eating grass. As cattle grow, grains like corn and wheat are added to their diets. This “grain finishing” enhances marbling in beef, giving it the great flavor we all enjoy. All beef, no matter how it was finished, is a good source of many essential nutrients, including zinc, iron and protein. And all beef is raised by farmers and ranchers who are passionate about bringing safe and wholesome beef to the table. As beef lovers, we appreciate all types of beef, and we believe this answer is a matter of taste.

We do have a collection of 100% Grass Fed and 100% grass finished beef sources from a one farm program in Nebraska under the Niman Ranch umbrella.

Do you Offer Discounts?

Every now and then we do, that said it is rare. We offer the best prices we can for the quality we sell. We do NOT play the discount game.

Meat is a commodity, prices fluctuate based on supply and demand… that means that NONE of the players get to decide what prices look like. If you want a certain quality, you will have to pay what it costs… and that is what we do.

How Do I figure How much beef to order per person?

The average person will eat between 6oz and 12oz of beef in any one serving. According to our research the average male usually consumes 10 oz and the average female 6 oz.

Order cancellations

You may cancel an order with advance notice. We will do all that we can to honor your request, but if the order has already begun the shipping process, we cannot change it or cancel it.

How will my beef be delivered?

Ideally we would hand-deliver every piece of beef as customer service is the most important part of our business. However, if you live outside our delivery area, we will ship. We believe in person-to-person communication and see technology as a way to empower, and not replace human communication. We aim to be an old-school butcher shop that maximizes the use of technology.

How Should I defrost my Beef?

Defrost beef properly and the flavor will be great. The best way to thaw beef is in a refrigerator. DO NOT thaw beef at room temperature. Place it on a tray, inside the refrigerator and let it thaw for 12 hours. Thicker pieces may require longer defrosting times.

If you need it sooner you can thaw the vacuum sealed bag in cold water for around 45 minutes. The last alternative is to use the defrost feature in a microwave.

MY beef arrived Thawed out??

Sometimes Vacuum Seal will break while in transfer, especially with products with odd shapes or bones. This is perfectly normal when shipping beef and should not affect the quality of the product. This is a normal risk of ordering beef online to be shipped from elsewhere.

My beef Arrived with a broken -vaccum seal?

If you have ordered outside of our delivery area it is entirely possible your order will arrive thawed out. That is usually ok,

Thawed steaks and chops may be refrozen as long as they have remained refrigerated and have not been thawed longer than one day.

Sometimes the vacuum – package will leak while the product is thawing due to small pinholes that can occur during freezing and/or shipping. As long as it remained frozen and was refrigerated while thawing, this is not a concern.

Ir your meat Certified Organic?

Some. Our producers follow Organic practices. Ferry Farms is an environmentally verified plant as well as Bell & Evans. But it’s very difficult for small farms to obtain organic certification. We do not believe the premium for the certification is worth it. Simply put, we work with farmers who believe in doing things the right way.

Vacuum Packaging?

Vacuum packaging is a form of Modified Atmosphere Packaging. It simply means changing the atmosphere in which food is stored in order to keep it fresher for longer.

Meat is put inside the specially designed food safe bag and then placed inside the vacuum machine where the machine extracts all the air from inside, creating a vacuum inside the chamber. Once the correct pressure has been reached, the vacuum is released, and two heated bars seal the bag shut.

Depending when you plan to eat your meat you can choose to keep products in the fridge for a longer period of time and can avoid freezing your meat (which we believe affects the taste and tenderness).

Gel Packs Or Dry ice

The Gel Packs or Dry Ice we use for our shipments are NOT toxic and designed to transfer food. As long as you clean them with water from any of the meats, the meats are completely safe to eat.

Holiday Shipping & Special Occasions

For special occasions we recommend selecting a delivery date AT LEAST 1 week in advance to allow for any delays and to let your product thaw safely.

Many of our larger cuts (hams, prime rib, briskets) can take 3 to 4 days to completely thaw. Please plan accordingly and schedule shipments with enough time to safely thaw in the refrigerator.
